After three days of work, the meeting, which was attended by more than 400 culinary professionals for debates and presentations at the Cabaret Tropicana, the most important nightclub on the island, comes to an end on Friday.
The experts came from various nations such as Mexico, Peru, Spain, Colombia and the Dominican Republic, along with the hosts.
The participants’ opinions highlighted the fact that the traditional dishes of Cuban cuisine are of great attraction for those who choose this archipelago for their vacations.
That was the opinion of Santiago Gutierrez, member of the Federation of Culinary Associations of the Republic of Cuba and executive chef.
He also said the island’s gastronomy is the result of a process of transculturation involving aboriginal, Hispanic, African, French, French-Haitian, Chinese and American cultural heritage, which makes it very diverse. Cuban cuisine was declared Cultural Heritage of the nation in 2019, as it is considered part of the national identity and a metaphor of what Cuba represents as an ethnic conglomerate, they recalled at the meeting.
